近红外光谱技术快速检测新鲜红辣椒中水分含量和辣椒素含量的研究

为了快速准确地检测新鲜红辣椒中水分含量和辣椒素含量,采用近红外光谱技术结合偏最小二乘法(PLS)建立预测新鲜红辣椒中水分含量和辣椒素含量的定量模型.对5个品种138份新鲜红辣椒进行光谱采集,并将采集的光谱数据分别与水分含量和辣椒素含量检测值进行关联.结果表明,水分含量检验集、校正集、预测集模型的相关系数r分别为0.958 5、0.988 6、0.928 5,残留预测偏差(RPD)都在2以上,模型拟合效果较好,预测性和准确度高;辣椒素含量模型相关系数r均大于0.8,RPD均大于2,模型预测的准确度高.说明基于近红外光谱模型快速检测新鲜红辣椒中水分含量和辣椒素含量的方法可行.

In order to detect the water content and capsaicin content of fresh red pepper quickly and accurately, the quantitative models for predicting water content and capsaicin content in fresh red pepper were established by near infrared spectroscopy combined with partial least square (PLS) method. The spectral data of 138 samples from 5 varieties of fresh red peppers were collected, and the spectral data were correlated with the water content and capsaicin content respectively. The results showed that, the correlation coefficients of test set, correction set and prediction set models of water content were 0.958 5, 0.988 6 and 0.928 5, respectively, and the residual prediction deviation (RPD) were all above 2, indicating good model fitting effect and high prediction and accuracy. The correlation coefficients of capsaicin content model were all greater than 0.8, and the residual prediction deviation were all greater than 2, indicating the model occupied preferable prediction. In summary, the method based on near infrared spectroscopy model for rapid detection of water content and capsaicin content in fresh red pepper is feasible.
