This paper provides an introduction to the components, structures, and interaction mechanisms of cereal dietary fiber and phenolic substances. Furthermore, it elaborates on the absorption and metabolism pathways within the body for these dietary fiber and phenolic substances, as well as their synergistic regulatory effects on gut microbiota, short-chain fatty acids, and phenolic acids. These findings offer a scientific foundation for the development and application of functional products in the field of gut health.
