通过对大豆磷脂化学改性广泛、深入的研究,综合利用单个改性方法的优点,开发出一种酰化—羟化—中和—萃取的改性方法。改性磷脂的乳化及亲水性能较原料磷脂有着显著提高,并在质量指标上完全符合对同类产品的要求。另外,本研究利用高压液相色谱分析了改性磷脂及未改性磷脂的组成,结果表明,改性磷脂性能的改进与其分子结构的变化相适应。
The extensive study on the chemical modification of soybean lecithin was conducted. Advantages of single modifying methods were comprehensively utilized and acylation -hydroxylation - neutralization-extraction method was developed. The emusifying behavior and hydrophilic property of the modified soybean lecithin are much better than thoes of unmodified lecithin, and quality indices of the modified lecithin are also comparable to thoes of similar products. Furthermore, HPLC was used to analyse compositions of the modified and unmodified soybean lecithins, the results confirmed that the changes of lecithin properties were conformable to those of lecithin molecular structures.
